These are currently in my oven. I can tell you this much. The batter? Fucking Delicious. I was having a hard time not eating it.
I haven’t updated you guys on what’s happening in my kitchen in a while. I blame school for my slowing down on experiments.
But today I am going to be making cowboy cookies, chocolate raspberry cookies, chocolate zucchini muffins & a vegan shepherdess pie.
I swear I’m not some sugar addict. The cookies were ordered by classmates. (I’ve started selling cookies because I’ve lost interest in processed sugar lately. The muffins are for a friend awaiting biopsy results)
I’ve also order The Vegg so come next weekend, I’ll be making it in 2 or 3 forms & I’ll be veganizing Panera Bread’s Chocolate Duets with Walnuts. (It’s an old favorite) OH! I’ll also be making vegan cheeze its & possibly Spicy Chili Burgers

so, these oatmeal peanut butter chocolate chip cookies might look familiar. but this time, I PERFECTED the recipe (http://www.food.com/recipe/vegan-peanut-butter-chocolate-chip-oatmeal-cookies-259348). mostly because I didn’t have enough brown sugar, crunchy peanut butter, etc. but the unintentional alterations made these cookies irresistible :D changes I made: creamy (not crunchy) organic peanut butter, 1 cup brown sugar and 1 cup vegan cane sugar (instead of 2 cups brown sugar), almond milk instead of soy, 2 cups all purpose flour (no whole wheat), and of course I used extra vanilla and chocolate chips.

Two soft cake-like pumpkin spice cookies stuffed with cinnamon buttercream. Skip the frosting and this cookie is low-fat!
Cookie:
- 1 1/2 T Flax plus 1/4 c water
- 1 c sugar
- 3/4 c unsweetened applesauce
- 1/2 c canned pumpkin (1/2 14oz can)
- 1 t vanilla extract
- 3 c flour
- 1/2 t ground…
